Unilever Chefs Draft Manifesto with Plant-Based Goals

Worldwide chefs are creating a manifesto that will help restructure global food systems to reduce waste, promote healthier eating, and focus more on plant-based ingredients.

International corporation Unilever revealed this week that its chefs have been working to create a “Chef’s Manifesto”—a framework to help worldwide chefs organize a better food system. The manifesto is being created with the help of SDG2 Advocacy Hub—a partnership between food-advocacy organizations and chefs—and outlines eight tenets and action points that more than 100 chefs have deemed important in creating a better food system. In addition to eliminating food waste, growing ingredients that are sustainable and respectful of the earth, and serving foods that are local and seasonal, a main tenet of the manifesto focuses on plant-based ingredients. “Bridging the gap between production and consumption,” Unilever President of Foods Amanda Sourry said, “chefs can also be influential advocates for food system transformation. The manifesto’s aim is to create a community of chefs across the world, equipped with a simple set of actions which will help them drive progress on the food-system issues that matter most to them.” The manifesto currently includes a three-part action plan that encourages chefs to source food ethically, use their networks to build better food ecosystems, and utilize their culinary skills to educate new generations of forward-thinking chefs. SDG2 aims to eliminate hunger, achieve food security, and improve nutrition worldwide by 2030.
