Wellington, United Kingdom-based eatery The Dolphin placed sixth in the National Pizza Awards held in London last month. The eatery submitted a creation called the “Liber” topped with vegan green pesto, capers, plant-based sausage, and fresh and sun-dried tomatoes. The Liber competed against pies made by top chefs from 15 pizzerias across the UK and was the only vegan entrant. While The Dolphin owner Anna Gorman is not vegan herself, she developed the pizza as a statement to other restaurant owners that vegan diners deserve more exciting meal options. “My partner and I roll our eyes and groan when the vegetarian choice is vegetable lasagna or mushroom risotto,” Gorman told local media outlet Somerset County Gazette, “the go-to dishes of establishments that either don’t understand or care about vegan or vegetarian diets.” Several UK chains have launched vegan pizza options in recent months—including 140-location Italian eatery Zizzi, which added nine vegan options to its menus in 2016.
