Vegan food truck Vego Bistro recently began work on a full commissary kitchen to expand its reach in the greater Atlanta area. Vego Bistro serves an eclectic menu comprised of dishes such as a vegan BBQ Pulled “Vork” Sandwich stuffed with spiced jackfruit, the Taco Stack (a take on a Mexican-inspired taco salad), and gluten-free macaroni and cheese, along with a selection of soups, sides, and four daily desserts. Through their charity—Full Bellies: Full Hearts—Vego Bistro founders Lindsay and David Esterline partner with local organizations to serve the truck’s full menu at least once per month—free of charge—to people at homeless shelters. The truck is currently off the street—a requirement during the construction of the commissary kitchen—and the couple is nearing completion of its crowdfunding campaign to finance the expansion, with the hopes of opening a full-service restaurant in the area soon.
