International chain Pret a Manger this week launched its anticipated Christmas menu in the United Kingdom. The menu features the Very Merry Christmas Sandwich (the company’s first vegan Christmas sandwich), which is served on granary bread; filled with grilled carrots, spinach, and a specially made vegan stuffing comprised of crispy onion, and caramelized pecans; and finished with a port-and-orange cranberry sauce. In the past year, Pret CEO Clive Schlee has restructured the chain in response to customer feedback for more plant-based options. The chain now includes three all-vegetarian Veggie Pret locations, refrigerators filled with only vegetarian food at many meat-serving locations, and an array of vegan menu options—the latter of which Schlee recently credited for a 70-percent increase in company sales in 2016.
