New eatery Leguminati is preparing to open in Orlando, FL in the coming weeks. The restaurant—which previously operated as a food truck by the same name—will be run by friends Bex Larsen, Nikki Namdar, and Jeremy Joseph. While the menu has yet to be announced, the truck was popular for it’s burgers, barbecue platters with macaroni and cheese, and Leguminiati’s vegan take on Taco Bell’s crunch wrap. The trio partnered with Sandwich Spot owner Matthew Scot to open their brick-and-mortar restaurant, which will operate in Orlando’s Milk District, a neighborhood named for its roots in dairy processing. To further bolster the Orlando vegan scene, celebrity chef Mary Mattern—who has previously worked as the on-tour chef for iconic band blink-182—and her fiancé Neil Westfall of pop-punk band A Day to Remember, are readying to open vegan eatery Heirloom Deli in the area this spring.
