Vegan bakery Pâtisserie Dugout is slated to open early 2018 in Montreal, Canada. The new bakery is founded by classically trained French pastry chef Marie-Charlotte Dugout, who plans to show that decadent desserts do not require animal products. “People want to eat desserts,” Dugout told media outlet Eater, “but they don’t want to eat unhealthily, and that’s how I got interested in vegan trends. Pâtisserie Dugout will serve tarts and cakes made with fresh fruit and dark chocolate ganache, in addition to savory options such as soups, salads, and sandwiches. “It’ll be just like a pastry shop in France,” Dugout said,.“It’s just a bit lighter, but the doughnut is going to be a doughnut, and the tart is going to be a tart, as if it wasn’t vegan.” The 12-seater bakery will feature neon ‘80s-themed decor, and half of its offerings will be gluten-free.
