Chipotle will offer its Sofritas in select East Coast locations starting in late October, reports The Washington Post. The vegan filling, which contains tofu, chilies, and poblano peppers, was first introduced in San Francisco in January, and its popularity spurred the company to expand the menu item throughout all of California, the Pacific Northwest, and Colorado. The food chain noted that it believes the Sofritas have a broad range of appeal, and will be popular among East Coast omnivore patrons as well as vegans. “We aren’t looking for markets with more vegetarians necessarily because we believe that Sofritas is appealing to vegetarians and vegans and has crossover appeal,” said Danielle Winslow, a Chipotle publicist, to The Washington Post. The Mexican food eatery also announced recently that its pinto beans will now be bacon-free—and vegan.
