NYC Restaurateur to Open Raw Vegan Establishment

New York City’s lauded chef, restaurateur, and businessman—Jean-Georges Vongerichten—recently announced in an interview with The New Potato that he will open a raw vegan eatery this spring in New York City. This will be the French-born culinary connoisseur’s 12th Big Apple establishment, but he can be credited with starting more than 20 restaurants throughout the world in cities such as Shanghai, Paris, and Los Cabos Mexico. While Vongerichten’s regularly caters to the omnivore crowd, he has staked his reputation on using natural, vegetable flavors, as can be experienced at the ever-popular ABC Kitchen on East 18th Street—an establishment that’s noted for its seasonable and sustainable local produce.
