Upscale Vegan Eatery to Open in New York City

Mainstream restaurateur Ravi DeRossi hopes to dispel the “granola-crunching” vegan stereotype with his new concept.

This summer, New Yorkers will have yet another vegan dining option in the city—one with an upbeat, nightlife twist. Ravi DeRossi, who has been vegan most of his life and is the owner of several Manhattan bars and dining spots, plans to open Avant Garden, an all-vegan eatery in New York’s East Village. A long time in the making, DeRossi hopes his “passion project” will dispel the “granola-crunching” vegan stereotype by featuring a frequently changing, seasonal menu focused on fresh vegetables, a full bar, and a fun, social atmosphere. Andrew D’Ambrosi, the Executive Chef at DeRossi’s Bergen Hill restaurant and former Top Chef contestant, will bring a collection of his best vegan recipes to Avant Garden including potato cannelloni with pine nut ricotta, a French cassoulet, and a vegetable ceviche. DeRossi is also launching a non-profit organization called BEAST (Benefits to End Animal Suffering Today) and will host fundraisers at the restaurant.
