Jenné Claiborne, the woman behind popular vegan food blog Sweet Potato Soul, hosted a cooking segment on NBC’s Today Show on Friday. The seasoned vegan cook hosted a demo with anchor Al Roker, wherein she made vegan crab cakes from chickpeas, hearts of palm, and an eggless aioli made with vegan mayonnaise, roasted red peppers, and dill. The resulting seafood-free cakes stunned the hosts, who peppered Claiborne with praise throughout the segment. “If all vegan food tastes like this, I would become vegan tomorrow,” anchor Tamron Hall said. “This is amazing—the flavor is so layered and the texture is like crab cake with no crab!” Claiborne took to Instagram afterward to share her elation—and news of a celebrity sighting. “These vegan crab cakes were a hit on the Today Show. Oh, and then Lil Kim blew me a kiss.”
