New York College Gets Its First-Ever Veg Dining Station

Students at Canisius College can now dine on vegan burgers, cupcakes, mac and cheese, and more.

Canisius College in Buffalo, NY has introduced its first-ever vegetarian dining station in campus cafeterias. Dubbed “Pitchforks”—complete with signage that reads “Eat More Plants”—the station serves the Canisius student body of more than 4,000 with options such as sweet potato-bean patties with avocado and beet hummus, tempeh Reuben, macaroni and cheese, and a line of all-vegan cupcakes. The student body has reportedly responded very well to the new offerings. “The Pitchforks eatery has been a big hit with our graduate students, most of whom prefer vegetarian or vegan fare,” says Paul Waldau, professor and Director of Anthrozoology Graduate Program. “This development is part of a wonderful trend to responsible eating—measured by something other than human health alone.”
