Awaking Autumn

The seasons, they are a'changing! From traffic jams peppered with yellow school buses to chilly weather signaling the start of sweater season, September ushers in all the gorgeous sights and sounds of autumn. We love watching the leaves change color while sipping on mulled apple cider, and as the month edges along, we rejoice as fall flourishes into full-swing. Whether helping youngsters pack vegan back-to-school lunches or jet setting off to Prague for an autumnal escape, we simply can't get enough of the fairest of seasons.

Veg Festival Evolution
Ever wonder how veg festivals across the country got their start? As fall festival organizers gear up to host another season of compassionate conferences, VN investigates the history and growing impact of vegan-friendly festivals.

Denny's Vegan Burger
Tired of settling for a side of fries when catching a late-night bite? Thanks to the new, vegan-friendly burger at Denny's restaurants, you no longer have to relegate your diner dining to starchy carbs. Recently, the chain added Amy's Kitchen vegan burgers to its menu at locations across the US. Worried that the veggie patty isn't accompanied by a cruelty-free bun? Never fear, as the sesame seed burger buns are 100-percent vegan.

Egg Recall Outrage
In August, Iowa-based hatcheries Wright County Egg and Hillandale Farms issued a recall of more than 500 million eggs distributed throughout the US after a salmonella outbreak was linked to egg shells. News outlets across the country reported on the large-scale recall, scrutinizing the egg industry, and within two weeks, the US Federal Department of Agriculture (FDA) launched an investigation into Wright County Egg and Hillandale Farms.

Comforting Corn Chowder

Warm chilly September nights with this silky, savory corn chowder courtesy of Jon and Robin Robertson's new cookbook, Vegan Unplugged: A Pantry Cuisine Cookbook and Survival Guide. Combining hearty, crunchy vegetables including potatoes, corn, and celery, this satisfying chowder is one of many easy-to-make recipes featuring simple staple ingredients.

Serves 4

What You Need:
2 15-ounce cans corn kernels, drained
1 15-ounce can diced white potatoes, drained
1 tablespoon dehydrated minced onion
1/4 teaspoon celery salt
2 cups vegetable broth
1 cup non-dairy milk
1 tablespoon cornstarch combined with 2 tablespoons water
Black pepper
1 2-ounce jar chopped pimentos, drained (optional)

What You Do:
1. In a large pot, combine the corn, potatoes, onion, celery salt, and broth and bring to a boil. Reduce heat to medium and simmer, stirring frequently, for 5 minutes.

2. Add the non-dairy milk and return to a simmer. Stir in the cornstarch mixture and stir until thickened slightly. Season to taste with pepper.

3. Ladle the soup into bowls and garnish with pimentos, if using.
