Recipe this Month: Vegan Chocolate Mousse
Smooth and velvety silken tofu stands in perfectly for dairy products in desserts. Try Maribeth Abram's recipe below, excerpted from her newly released cookbook Tofu-1-2-3.

For kids, it’s simply pudding, but for adults, it’s exquisite mousse—especially when spiked with almond liqueur.

Serves 6


1 (12-ounce) package firm or extra-firm silken tofu (1-1/2 cups)

1 cup dairy-free chocolate chips, melted

1/3 cup pure maple syrup

2 teaspoons vanilla extract

1 tablespoon almond liqueur or 1/4 teaspoon almond extract (optional)

1. Melt chocolate chips in a double-boiler, stirring constantly to prevent burning, or in the microwave oven on the defrost setting for approximately 3 minutes, stopping to stir at least once.

2. Put the tofu in a food processor and blend until completely smooth, about 2 minutes. Add the melted chocolate chips, maple syrup, vanilla, and almond liqueur or extract, if using. Blend until smooth.

3. Transfer to six serving bowls or glasses, cover the top of each with plastic wrap, and refrigerate for at least 2 hours before serving.

Per Serving: 0mg cholesterol, 234 calories, 10g fat, 30g carbohydrate, 5g protein

For those up North, EarthSave Canada is organizing A Taste of Health in Vancouver come September 30 and October 1. A spacious exhibition hall in the lovely Croation Cultural Center will host 50 exhibition tables and 24 non-profit tables. The main focus will be eating lower on the food chain and making other informed choices.

Observe World Farm Animals Day, which takes place on Gandhi's birthday, October 2. You can visit Farm Animal Reform Movement's events directory to find out if anything's shaking in your area.


Get Your Calcium
So you've quit the dairy, and you don't know quite where to turn for your calcium.. No worries—you aren't alone. We are told so often that we can only get this vital nutrient from milk and other animal-derived products, that we can easily forget all the other, better ways of stocking up. The following plant-based (and delicious) foods have more than 100 milligrams of calcium per serving:

Last month, we asked, "Who or what inspired you to go veg?" We received an overwhelming number of thoughtful responses, and thank you all for contributing them. "Ten years ago, I was traveling from Chicago to Fargo, ND, to visit a friend. At the Chicago depot, I briefly made eye contact with a girl getting on another bus. Hours later, in Minneapolis, there was a layover. I was sitting there waiting when suddenly that same girl sat down next to me. Our paths had crisscrossed with the buses. I found out she was a 16-year-old vegan running away from her abusive father to live with her aunt in northern Minnesota. I had been vegetarian for five years and had thought about switching, but I worried it might be too hard. But I thought to myself, "If this girl who has been through so much can do it, I have no excuse." I don't remember her name or face, but she changed my life and I want to thank her. It's been ten years since I went vegan, and I can't imagine living any other way."
