Pineapple Lime Ice

This refreshing dessert is part of a Zen approach to eating.

What you need:

  • 2 cups fresh pineapple, chopped
  • 6 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 2 tablespoons lime zest, grated
  • 1/2 cup water
  • Fresh mint or lime slices

What you do:

  1. Blend together all ingredients in a food processor. Strain blended liquid, discarding any pulp, and pour the thick juice into a bowl.
  2. Place in freezer. After 2 or 3 hours, remove from freezer and break ice into large chunks. Blend again in food processor until smooth and creamy. Return to freezer for at least 30 more minutes.
  3. To serve, scoop ice onto serving plates or into sherbet glasses. Garnish with sprigs of mint or slices of lime.
