Lemon Lentil Soup

Simple, clean ingredients cook up to make a healthy soup with mass appeal.

What you need:

  • 2 cups uncooked lentils
  • 6 to 8 medium potatoes, cubed
  • 5 to 6 stalks organic Swiss chard, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 2 tablespoons sea salt
  • 1 teaspoon black pepper
  • Juice of 1 small lemon

What you do:

  1. Put lentils and vegetables in pot and add enough water to cover. Cook for about two hours. 
  2. Add sea salt, pepper, and lemon juice. Simmer a few more minutes and serve.
