What you need:

  • 2 cups crispy rice cereal, crushed
  • 1-1/2 cups peanut butter
  • 2 cups powdered sugar
  • 1/2 cup non-hydrogenated margarine, melted
  • 1 teaspoon vanilla
  • 1/2 cup semisweet chocolate chips
  • 2 tablespoons non-hydrogenated margarine

What you do:

  1. Generously grease a 9-x-13-inch baking pan. In a large bowl, combine the cereal, peanut butter, sugar, melted margarine, and vanilla. Press the mixture into the prepared baking pan.
  2. In the top of a double boiler or in a medium metal bowl set over a pot of gently simmering water, melt the chocolate and 2 tablespoons margarine, stirring just until smooth. Remove from heat. Spread the chocolate mixture over the top of the peanut butter mixture. Set aside for 1 to 2 hours to set.
