Banana Chip Brownies

These all-in-one treats combine everything we love about dessert—you cant go wrong with the coconut-chocolate-banana combo!

If there's a good reason for leaving sweet additions like cashews, banana chips, and shredded coconut out of your brownies, we've never heard it. These chunky handfuls are sure to impress, whether you're making them for your in-laws, coworkers, or just for your extra-special weeknight at home. Okay, we'll say it-you'll go ape for these!
Makes 9 brownies
What You Need:
- 3/4 cup sugar
- 1/3 cup safflower oil
- 1/4 cup water
- 1 teaspoon vanilla
- 2/3 cup whole-wheat pastry flour
- 2/3 cup cocoa powder
- 4 teaspoons arrowroot
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/3 cup dried banana chips, coarsely chopped
- 1/3 cup chocolate chips, coarsely chopped
- 1/4 cup cashews, coarsely chopped
- 2 tablespoons dried coconut, shredded
What You Need:
- Preheat oven to 350 degrees. Lightly oil a 9-inch square pan and set aside.
- In a medium bowl, stir together sugar, oil, water, and vanilla. Sift in flour, cocoa powder, arrowroot, baking powder, and salt. Stir well to combine.
- Pour batter into prepared pan. Evenly scatter banana chips, chocolate chips, cashews, and coconut over top and press gently with hands.
- Bake for 25 to 30 minutes or until set in the center. Allow brownies to cool completely before cutting with a sharp knife into nine squares.

I was pretty skeptical about the assorted toppings, but I tried them anyway and my family loved them! My only complaint is that they didn't hold together well when cut, so next time I'm going to try adding a "flax egg" to see if they stick together better. Regardless of the crumble factor, these were a treat we will have many more times, I'm sure!

I'm obsessed with these brownies! I make them all the time. I am actually in a baking contest tomorrow at my cpa firm and as the lone vegan (out of 300 people) I thought that I would bake these. People always like to try my vegan baking! Thanks for the awesome recipe.
