Roasted Potatoes

Earthy seasonings set off the moldable flavor of roasted potatoes. Hearty, filling, and great for breakfast, lunch, or dinner.

What you need:

  • 10 small potatoes (red, yellow, fingerling, etc.)
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • Olive oil spray (or about 1/4 teaspoon olive oil)
  • Salt to taste (optional)

What you do:

  1. Preheat oven to 400ºF. Wash potatoes and quarter them. Spray with olive oil (or mix with olive oil) and add herbs. Toss to mix.
  2. Spread on a cookie sheet and bake for 20 minutes. Turn them over and bake an additional 20 minutes, or until potatoes are golden brown.
