A delicious, healthy way to get your daily vegetables. This vibrant medley works as the perfect salad with a tasty vinegar and oil dressing.

What You Need for the Salad:

  • 1/2 medium cauliflower
  • 1/2 bunch broccoli
  • 6 ounces fresh mushrooms
  • 1 roasted red pepper, chopped

What You Do for the Salad:

  1. Chop cauliflower, broccoli, and mushrooms into bite-size pieces. Blanch separately in salted boiling water, plunge into cold water and set aside to drain. Place in a large mixing bowl with roasted red pepper.

What You Need for the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh basil
  • Salt and pepper to taste

What You Do for the Dressing:

  1. In a bottle, combine dressing ingredients and shake until well blended. Pour over blanched vegetables and let marinate at least half an hour. Season with salt and pepper.
