United Kingdom-based chain Arancini Brothers will transform one of its three London outposts into an all-vegan eatery in January. The vegan menu at the Old Street location will include two flavors of risotto balls (arancini), wraps and salads featuring vegan chicken, and burgers made with plant-based smoky chorizo and dairy-free cheese, along with a full breakfast menu, a selection of sides, and three desserts. “It is something we have always wanted Arancini Brothers to be,” co-founder David Arkin told blog Fat Gay Vegan. “Our food has always been based around a vegan/vegetarian diet, and now we want our customers to experience our full vegan flavor with nothing getting in the way.” Arkin revealed that while the concept is scheduled to run only through Veganuary—a UK-based campaign to encourage people and businesses to go vegan for the month of January— he hopes to keep it all-vegan permanently if the eatery is popular. “I feel veganism is here for the long run and is not just a trend,” Arkin said, “so we want be on the frontline of the movement serving up our delicious, healthy food.”
