French toast has never looked (or tasted) so good, thanks to this simple, but mouthwatering recipe from Follow Your Heart’s VeganEgg Cookbook.

What you need:

¼ cup powdered vegan egg (such as AcreMade)
1 cup ice-cold almond or soy milk
½ teaspoon sea salt
1 teaspoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon ground cardamom
3 tablespoons maple syrup
1½ teaspoon vanilla extract
2 tablespoons oil, plus more for coating pan
6 slices of bread

What you do:

  1. In a medium bowl, whisk together powdered vegan egg, ice-cold almond or soy milk, sea salt, cinnamon, allspice, cardamom, maple syrup, vanilla extract, and oil. Whisk until smooth and slightly thickened, about 1 minute. Set aside.
  2. Pre-heat griddle or pan to medium-high heat. Grease griddle with additional oil. Coat each slice of bread in batter letting excess drip back into bowl and then place on hot pan or griddle.
  3. Cook until slightly golden, about 3 minutes. Flip and cook for about another 3 minutes, or until golden. Serve warm and top with real maple syrup and fresh fruit of your choice.
