Spicy Mango Soup & Fruit Salsa
Sweet mango mixes with spicy seasoning, soft vegetables, and rich avocado to make this nutrient-dense raw soup.

Serves 6
What You Need for the Soup:
- 1 cup water
- 5 cups mango, peeled and seeded
- 2 cucumbers, peeled
- 1 lime, juiced
- 1/2 avocado
- 1/4 cup cilantro
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 2 tablespoons light miso
- 1 teaspoon cumin
- 1/2 teaspoon Celtic salt, or to taste
- 1/4 habanera chili or 1 teaspoon Sambal Olek
What You Need for the Fruit Salsa:
- 1/2 cup mango, peeled, seeded, and diced
- 1/2 cup red bell pepper, seeded and diced
- 1/2 cup cucumber, peeled, seeded, and diced
- 1/2 cup avocado, peeled, seeded, and diced
- 1/4 cup cilantro, finely minced (garnish)
- 1 tablespoon Sambal Olek (garnish)
What you do:
- Place ingredients for soup in blender and blend until smooth. Combine ingredients for fruit salsa and gently toss. To serve, place 1/4 cup fruit salsa in center of each soup bowl and carefully pour one cup of soup in each, so fruit salsa is surrounded by soup. Attractively garnish each bowl with a sprinkle of cilantro all around and a smidgen of Sambal Olek in the center. Serve chilled or at room temperature.
