Meal-Prep This Tropical Vegan Blueberry Smoothie

Smoothie jars make getting out the door during the week so much easier! These easily adaptable smoothie mixes from Jackie Sobon’s cookbook Vegan Yack Attack’s Plant-Based Meal Prep are perfect for an on-the-go nutrient boost. 

What you need:

2½ cups frozen chopped spinach, broken into pieces
4 cups frozen blueberries
2½ cups frozen pineapple chunks
1 cup hemp hearts
1¼ teaspoons ground turmeric
1¼ teaspoons ground ginger
5 small bananas
3¾ cups water

What you do:

  1. Set out five 24-ounce wide mouth jars. Divide spinach, blueberries, pineapple, hemp hearts, turmeric, and ginger evenly among jars; screw lids on jars and store in freezer.
  2. When you’re ready to make a smoothie, into a blender, add one peeled banana, broken into chunks. Run warm water over outside of one covered jar to help release frozen ingredients. Pour jar contents into blender, followed by ¾ cup water. Blend until completely smooth, then transfer back to jar and enjoy.
