Vegan French Bread Pizza

This is one of my all-time favorite pizzas, compliments of Joanne Stepaniak from The Ultimate Uncheese Cookbook.

What you need:

  • 1 loaf French bread cut in half width- and lengthwise
  • 1/2 pound firm tofu, rinsed, drained and crumbled
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon tamari
  • 1 teaspoon ground fennel or dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed garlic
  • 1/8 to 1/4 teaspoon cayenne
  • Salt and pepper to taste

What you do:

  1. Preheat oven to 450 degrees. Place French bread, sliced sides up, on a baking sheet or pizza stone.
  2. Combine tofu, tomato paste, olive oil, tamari, fennel or basil, oregano, garlic and cayenne in a food processor and blend into a smooth paste. Spread mixture evenly over bread and sprinkle with salt and pepper to taste.
  3. Bake for 10 to 15 minutes, until French bread is golden brown. Serve hot.
