While optional to include, it offers a health booster that’s easily hidden in this meal’s refreshing, creamy dressing. 

What you need:

For the bowl:
½ cup fresh or frozen corn
1 roma tomato, diced
¾ cup black beans
½ head romaine lettuce, chopped
½ red bell pepper, diced
1 scallion, sliced
2 tablespoons pumpkin seeds

For the dressing:
½ cup plain, unsweetened almond or soy yogurt
Zest and juice of 1 lime
1/3 cup fresh cilantro, chopped
½ teaspoon garlic powder
½ teaspoon chili powder
½ teaspoon acerola powder, optional
½ teaspoon salt

What you do:

1. For the bowl, in a large bowl, combine all ingredients. 
2. For the dressing, in a medium bowl, combine all ingredients and stir to combine. Add to bowl mixture and toss to combine.
