Vegan Salted Chocolate and Banana Bread Blondies

These simple, gluten-free, oil-free blondies are packed with swirls of peanut butter and melty chocolate.

Combine banana bread, chocolate chip cookies, and blondies in one, and you’ve got these baked treats from the Easy Allergy-Free Cooking cookbook. Try swapping the peanut butter for tahini for a nut-free option. 

What you need:

2 tablespoons vegan milk
2 mashed bananas
½ cup peanut butter 
3 tablespoons maple syrup
½ cup gluten-free flour
¼ cup sugar 
½ teaspoon baking powder
¼ teaspoon baking soda

For topping:
Flaky salt
Vegan chocolate chips

What you do:

  1. Preheat oven to 350 degrees. In one bowl, mix milk, bananas, peanut butter, and maple syrup. In another bowl, mix flour, sugar, baking powder, and baking soda. Slowly add wet ingredients to dry and mix well.
  2. Into a nonstick 9 x 9-inch baking dish, pour batter. Bake 20 to 25 minutes. Remove from oven and immediately top with salt and chocolate chips. Let chocolate chips melt on top and let cool for 15 minutes before serving.
